Discovering Fermented Flavor: Pumpkin Gochujang at Palbonggol Village
Who knew there were so many places in Cheongju where you could experience traditional Korean sauce-making?
This time, I visited Palbonggol Village, famous for its special fermented pumpkin gochujang (Korean red chili paste). What makes it unique? The unexpected addition of sweet pumpkin to the fermentation process!
There was a large group of participants — all wearing matching red aprons, making it feel like we had all become part of the gochujang itself. The aprons seemed to say:
"I am gochujang!"
Maybe the pumpkin makes this gochujang just a bit more elegant — bold but refined.
The secret? It's in the ingredients.
All the materials were thoughtfully prepared for the experience, so even beginners could enjoy mixing and making without pressure.
The process was simple:
Just shake, mix, and stir!
That’s it — your own handmade pumpkin gochujang is ready.
A gentle sweetness, followed by that signature deep flavor.
You can definitely taste the pumpkin.
As for the taste?

To everyone who joined us —
I hope this sweet and slightly sassy moment stays with you for a long time.
